Weekend Re-cap & a recipe!

To say that I barely did anything this weekend is an understatement - I literally left our condo once all weekend! I wanted to have a chill/relaxing weekend because today marks the beginning of the craziest month at work ever. We have our major events for our Mexican Independence Day Festivals for two weekends in a row and then our Hispanic Heritage event in uptown Charlotte at the end of the month - mix in 2 national sales market trips to NYC & Miami = BUSY PAM! As usual - I may not be posting that much during the month but keep up with me via instagram (pamelaisanchez) & Twitter! @yesitis_kevin !

Friday - we went to a work happy hour with our coworkers - it was so much fun! We went to a mexican restaurant close to the office - I had this amazing sangria/margarita drink!

After - my sister and I started watching American Horror Story - dear god - this show is seriously amazing! If you like scary movies and ghost tv shows - this show is for you! I only have 2 episodes left to catch up! Definitely recommend this show!  Saturday - I caught up on some much needed sleep & watched more of my show.

Yesterday was spent with the family. I had a good workout at the gym in the afternoon and then my dad made this amazing pasta with sausage and fresh pomodoro sauce (yea we like to cook).

I wanted to share one of my favorite healthy meals - so easy to make & so delicious! 
Brown Rice Bowl with scrambled eggs & veggies

1) I scramble 2 eggs in Pam cooking spray 
2) microwave the one minute brown rice packets 
3) saute any vegetables you may want! I chose mushrooms & asparagus
4) Mix all together and add fresh cut avocado 
5) I like to add sirracha sauce for added spice!

  1. That healthy recipe sounds delish! Definitely need to try it! I've been a picky eater my whole life and just discovered Asparagus - new favorite veggie! I just roast it in the oven for 15 minutes with olive oil and kosher salt, it's delicious and sometimes tastes like Popcorn :)
