My weekend in Instagram and iPhone pics!

Hello lovelies! I hope everyone had a beautiful and amazing weekend - I had a fabulous weekend with my best friend Monica! She was so sweet to drive down to spend the weekend with me and we had such a great time, like we always do! I am so lucky to have a friend like her who would literally do anything for me and vice versa! Love you Mon :)

Weekend Pics!

Even though it is already Thursday I haven't had time to share my weekend photos! I also filmed some outfit of the day/night videos on my iPhone that I will share as soon as I can :)

I spent my weekend in Atlanta and actually was working at our GA offices Monday and Tuesday but I am back in Charlotte now and I am SO excited for the weekend bc my bestie Mon is coming down to Charlotte! Yay!!

Anyways, this weekend I was able to see my good friend Donna from high school who actually runs the very amazing blog Yoga in Heels!
She writes about fitness, fashion and fashionable workout gear - such an amazing fun blog to read!

Part of the award is to share 7 random facts about myself!

1) I am trilingual - my first language was Spanish but now I obviously dominate English more but I speak Spanish every day at work and with my family at all times. One of my majors in college was French Language and Literature so French is the third language I am fluent in

2) I spent two summers abroad in Montreux, Switzerland at a finishing school when I was 14 and 15. (this helped my french a lot!) - it was a great experience because we were able to travel to so many places on the weekend and I made such good friends that I still keep in touch with because of this.

3) I really like learning about history - especially ancient Egyptian times, the American Civil War, and the Holocaust (I watch specials on these all the time!)

4) The movie I have cried the most in is Disney's movie Up and I cannot watch it without bawling!

5) One time on a family trip to Argentina, we got mugged on the street and it was the scariest experience of all of our lives! Nothing happened thank god but it is still scary to think about what could have happened

6) I LOVE to sing and I can play the guitar (kind of-ish) - I took Piano for over 7 years and I am horrible at it! oops!

7) Up until my senior year of high school, I wanted to be an actress. I did theater all my childhood and wanted to pursue it but I didn't think it was practical.

Recipe: My Favorite Salad Vlog

Salad:
- mixed greens
- white mushrooms
- cherry tomatoes
- avocado
- fresh mozzarella

Dressing
- Extra Virgin Olive Oil
- Sherry Vinegar
- Dijon Mustard
- Shallot
- Pepper

A yummy healthy snack video!

Hi Guys! I am going to start sharing more healthy food recipes on my blog. Here is a VERY SIMPLE AND FAST snack that I like to make



Ingredientses (I purposely spelled it that way - RHONJ anyone?)
- Non fat greek yogurt
- cinnamon powder (you can also use splenda or truvia)
- blueberries (any berries really work in this - i like strawberries and raspberries too but I just happened to have blueberries)
- sometimes I added some kashi granola as well

You should def try it, yummy snack high in protein! :)

Weekend Pics + Best Dressed for Golden Globes

Hi loves! I hope you all had a great weekend! I am jealous of all of you that have Monday off from work! But duty calls! I had a very relaxing weekend. On Friday - I just cooked for my dad and went to sleep early. Saturday I went to a Power class at my yoga studio - HOT DAMN it was one of the hardest classes I have ever taken - I was literally drenched in sweat after the HOUR AND A HALF of intense yoga in 95 degree heat. A shower had never felt better - LOL. I have only been doing hot yoga and power yoga for about 2 weeks (5 times a week) and I can already see results (in combo with eating really healthy too) - I will make a post about this :)



Saturday I went out with my friends and Sunday I just ran errands, chilled, and drank some wine while watching the Golden Globes. Is it just me or is the most exciting part watching the red carpet? Also - am I the only person who cannot stand brad and angelina? who died and made them kings of the world? People are always like "SHE IS SO STUNNING" or "I GASPED WHEN I SAW HER DRESS" like I do not see any redeeming qualities about her and she needs to stop with the fake foreign accent.

what do you guys think? I was let down by my glee girls - I usually love everything Lea wears but I am not feeling what she wore last night and same for Diana Agron - yikes!

My week so far in INSTAGRAM & a recipe!

I know realize I have only been instagramming pictures of my food. I think I just want to share with the world my cooking :) haha - take a look at some of my favorite healthy meals I like to cook & some other random pics.

before going out on saturday night :)


Typical lunch (limited carbs allowed) - grilled chicken cooked in pam olive oil spray and mrs. dash salt substitute & satueed mushrooms and peppers on top of 1/2 cup brown rice!


Typical daily dinner - (no carbs) grilled tilapia (cooked in EVOO and seasoned with mrs. dash salt substitute) and steamed veggies with EVOO and pepper


Made quinoa for dinner on Saturday - turned out SOOO good!

I just came up with the recipe on my own
1) 1 cup of quinoa (MAKES A LOT) = 2 CUPS water - bring to a boil and then let simmer (med-low heat) for 15 minutes - water will be evaporated by then
2) in meantime, sautee veggies (I used yellow peppers, mushrooms and zucchini) in EVOO & pepper
3) Make a light dressing - I just used EVOO and half a lemon squeezed
4) When quinoa is cooked - I added in the veggies and dressing and then added some cut grape tomatoes and feta cheese - TADA!
done. amazing. LOVE.

Last but not least - my new starbucks obsession - I was getting so jittery and anxious from my daily americanos so I made the switch over to a venti unsweet green tea for my afternoon fix (still have coffee in the mornings but no longer in the afternoons!)


I'll try to take pictures of things other than food over the next week! LOL.

New Years Pics and my week so far...

Hello!! Hope everyone is having a good week! Mine has been great, although not working on Monday messed me up - I feel like today is Wednesday and not Thursday - anyone else with me?

Hope everyone's resolutions are going well, I have been doing really well with all of mine. I wrote all of mine down and I read them every morning and every night to make sure that I am doing my best to follow through!
